BEEF STEW
A camping recipe from Marvin
. This can be a meal in itself. The beef can be pre-cooked at home. You should finish the stew over a bed of coals on the campfire. It can cook while you take a short walk which will work up a good appetite for this hearty meal.

Prep Time: 2 hours

Ingredients:

  • 3 tablespoons flour
  • 2 teaspoons salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon dried thyme
  • 2 pounds beef stew meat
  • 3 tablespoons olive oil
  • 2 cups fresh apple cider
  • 1/2 cup water
  • 2 tablespoons cider vinegar
  • 1 large bay leaf
  • 4 carrots, sliced
  • 3 potatoes, quartered, sliced
  • 2 onions, sliced
  • 1 celery stalk, sliced
  • 1 apple, sliced

Preparation:

Combine flour, salt, pepper, and thyme in a bowl. Toss the stew beef into the flour mix. Brown with olive oil in a Dutch oven. Stir in cider, water, and cider vinegar. Bring to a boil. Add bay leaf. Simmer meat until tender. Add balance of ingredients and cook until the vegetables are tender.

Servings: 6

BEEF KABOBS
A camping recipe from Wild Bill Gwaltney
. This simple recipe produces great grilled meat flavor, so you may want to take more meat than you usually plan on. The skewers are sharp and difficult to pack out, so burn them in the fire or charcoal grill after you are done cooking. This recipe works well with stew meat, other inexpensive beef, or game meat (like antelope).

Prep Time: 30 minutes

Ingredients:

  • 1 1/2 pounds stew meat
  • 1 cup plain yogurt
  • 1 cup Italian dressing
  • 1 teaspoon Jamaican Jerk Seasoning Paste

Preparation:

Cut meat into nice sized chunks and marinate for at least one hour in a mixture of the yogurt and salad dressing. Add the Jerk Seasoning, if you like it spicy.

Thread the meat onto bamboo skewers that have been soaked in water. Place the meat skewers on a charcoal fire. Turn to ensure that all sides are exposed to the heat. Grill to taste, and eat while hot.

Editor's note: I like to alternate chunks of onion, bell pepper, and tomato between the meat chunks.

Bacon and Eggs in a Paper Bag

Cook Time: 10 minutes

Ingredients:

  • Two strips bacon (thick)
  • one paper lunch bag
  • one egg
  • one stick

Preparation:

Cut bacon strips in two, place at the bottom of the paper bag, covering the bottom. It is important that you have thick strips of bacon as thin ones will stick and adhere to the paper bag when cooked. Crack egg and put in paper bag on top of the bacon. Fold lunch bag down three times and poke a hole through it with the stick, so that the bag is hanging on the end of the stick. Hold over charcoal and watch the grease from the bacon protect the bag and cook the meal.

Campers Pizza Pie

Cook Time: 10 minutes

Ingredients:

  • Wheat bread
  • Butter
  • Mozzarella cheese
  • Spaghetti sauce
  • Pepperoni

Preparation:

Butter one side of two slices of bread. Using the pie iron, take two slices of bread, put 1 1/2 tablespoons pizza sauce on one slice of bread. Top with Mozzarella cheese and sliced pepperoni. Place other side of bread on top and butter outer sides of bread. Put sandwich into pie iron and place on coals of fire, keep a close watch and turn. Cook until bread is toasted.
